Spring/Easter Dinner Planning

I love to plan. I make lists, Pinterest boards, save photos and links, this is a full on part of my OCD and I’m okay with it (mostly). One of my most favourite things to plan is holiday meals. I usually start planning out the menu a few weeks in advance and I just do it in my notes app on my iPhone. I plan the courses, as well as make a grocery list of all the things I need for the recipes and we’re ready to go come the holidays. This year I really wanted to do a Spring Equinox dinner but pregnancy ended up getting in the way, I’m having a real hard time eating a lot of the time and sometimes things are too crazy when you want to do something. So this year I’m just combining the two for Easter and doing a Spring/Easter celebration meal! This year Easter is April 16th and I’m sharing my ideas below.

Appetizer

Dessert
I’m not entirely decided on this yet. I’m thinking either Frozen Citrus Mousse or Strawberry Shortcake Sundaes, both from Dessert of the Day by Williams-Sonoma
